A recipe.........

Massaman curry paste
3-7 red thai chilis chopped ...
1 tsp chopped lemongrass
1 tsp chopped galangal, (available at most asian grocers)
1 tsp garlic chopped
1 tsp chopped shallot
1/2 tsp toasted coriander seeds
1/2 tsp toasted while pepper corns 1/4 tsp toasted cumin seeds
5 cloves toasted

Put all the ingredients in a mortar and pestle with 1/2 tsp of salt and pound to a fine paste. It takes a while but it's worth it. Don't try this with a food processor, it won't work.
